Product Strategy I User Research and Insights I Brand Strategy
Ideal Experience of Local Coffee Shop
Project Overview
Local coffee shops compete with chains that have bigger budgets, loyalty apps, and brand recognition. Yet regulars often prefer them fiercely. What drives that loyalty, and what product and experience decisions create it?

Screener interviews, 12 in-depth interviews, cultural probes, sensory cue workshops
Audience
Coffee shop customers, owners, and employees in Savannah, GA
What we did
Unveiling the Project
We ran screener interviews across three local coffee shops to recruit 12 participants aged 24–35, evenly split by gender. To go beyond what people say, we used cultural probes and sensory cue workshops, asking participants to place images, words, and objects into environments that felt "right."
This let us capture emotional and subconscious associations that standard interviews miss. We also spoke with coffee shop owners and employees to understand the supply side of the experience.
What we found out
Three things consistently drove loyalty to a local coffee shop over a chain:
-
Familiarity as identity — regulars don't just know the menu; they feel known by the space. Being recognised by staff, having a "usual," and seeing the same faces creates a sense of belonging chains can't replicate at scale.
-
Sensory consistency — smell, lighting, and sound were more powerful loyalty drivers than coffee quality. A shop that smells and sounds the same every visit builds a Pavlovian comfort response.
-
Permission to stay — customers who felt unwelcome to linger left and didn't return. Seating layout, outlet availability, and implicit social cues around time all shaped whether someone became a regular.
Outcome
Local coffee shop owners don't need bigger budgets, they need deliberate decisions. The biggest product opportunities are in staff training around recognition, sensory environment consistency, and space design. These are low-cost, high-loyalty levers that chains structurally can't replicate.
